At Rickey’s, dehydration occurs in a USDA-inspected smoke chamber at temperatures no lower than 160°F. Different wood chips add unique smoky flavors. This stage lasts between 6 to 12 hours, depending on desired texture. Afterward, jerky is cooled for about 4 hours, finalizing the flavor and consistency.
